We’re aiming for light weight, fine chalky tannin with a pretty fruit concentration. A few tweaks on last year’s process have provided more structured, perfumed nose, and fruit concentration whilst still staying very light and very fine. Aiming for prettiness and pulling forward our pick to see what these old vines are capable of, there was fantastic acid retention and a gorgeous fruit profile.
